Canola oil is a type of edible vegetable oil derived from the seeds of the canola plant (Brassica napus), a cultivar of rapeseed. Canola oil is valued for its relatively low saturated fat content and high content of healthful monounsaturated and polyunsaturated fatty acids.
Structure and Composition
Canola oil mainly consists of free fatty acids like oleic acid (monounsaturated fat) and linoleic acid (polyunsaturated fat). It has a lower saturated fat content than other vegetable oils.
Canola oil also contains traces of phospholipids, tocopherols, carotenes and other minor components that impact the nutritional value, stability and flavor. The dark yellow or amber color is due to pigments like carotenes in canola oil.
Extraction and Production
Canola oil is produced through the mechanical extraction and refining of oil from canola seed. This process involves cleaning,cracking and separating the canola kernel from the hull,cook it then followed by oil extraction using solvents or mechanical pressing.

How canola oil processing plant extract the rapeseed?
Canola oil processing plants extract oil from canola seed through various oil extraction methods. The main steps involved in extracting crude canola oil are:
1. Pre-processing
The canola seed is cleaned,cracked and conditioned. The seed is then flaked into thin particles to expose.
2. Oil extraction
Oil is initially extracted mechanically using screw presses or expellers that apply pressure to the seed flakes to “squeeze” out the oil. The oil residue left in the pressed cake is around 6-8%.
The remaining flakes are then processed using solvent extraction to remove the remaining oil. The flakes are mixed with hexane solvent and the solvent extracts the oil, which is separated using a refiner.
3. Refining
The crude canola oil produced undergoes refining processes in the oil refinery to remove unwanted compounds. This includes alkali refining to remove free fatty acids, bleaching to remove chlorophyll and deodorizing to remove volatile compounds.
